Artichoke Pesto Pasta
Happy Meatless Monday! Mondays definitely get a bad rap (and, I mean, for good reason), so I guess it’s good to add as much fun into Mondays as possible. And artichoke pesto pasta is pretty fun. Not to mention, creating a theme night also helps to work those creative muscles when it comes to recipes.
However, I still love easy recipes for weeknight dinners. And this recipe for Lemon Artichoke Pesto Pasta was super easy. Not to mention, it’s healthy and requires only a few simple ingredients (most of which is probably already in your kitchen)!
To make this pasta a bit healthier, I used brown rice pasta (GF!) and added some raw baby spinach. For a little spice, I also added a ton of freshly ground black pepper. Have you guys ever had cacio e pepe? Kinda the same idea. And it’s kinda my favorite.
